Decided to make two 2 lb'ers and freeze one after it's cooked. Anyone ever done this? I don't see why it wouldn't thaw ok..

They only took 2 1/2 hours @ 230-250 to get them up to 160..

The smoked flavor really kicked them up a notch, and I thought they were very tasty and moist.. I'll definitely be doing this more often..

Nice job! My family loves smoked meatloaves. They freeze fine, just make sure to wrap them well and thaw them in the fridge.
 
Very nice job there chris your meatloafs look great. You can freeze these things and just a hint I slice mine and freeze in a foodsaver sysytem in single servings that way your don't have to thaw the whole thing.
 
Thanks everyone, I need to bite the bullet and buy a FoodSaver.. I've had my eye on this one, but I need to do some research and determine if there's a less expensive alternative, yet still high quality..
