New Smoker from Upton

Hi - I'm a new guy. I think I'll be using this forum quite a bit to help get me started.

Just bought a 30" Masterbuilt Electric Smoker (see, I've already learned that it's referred to as MES) and tried it yesterday for the first time for baby back ribs. I followed the recipe that came with the smoker -- basically 4 1/2 hours at 225. While the ribs were tender, they were nowhere smoky enough. I couldn't seem to get the chips to start smoking. What am I doing wrong? Could it be that I didn't place the smoker tray properly? I was able to load it fine, but every time I checked the chips, they were just sitting there in the tray, uncharred, with no smoke. Temperature was fine.

BTW, when I pre-seasoned it per the instructions at 275, same thing - almost no smoke and the chips never turned to ash.

HopHead welcome to SMF. I don't know much about your smoker but I'm sure someone that does will be around. May I suggest taking Jeff's 5 Day Ecourse its full of good info and its free. Welcome to the SMF. I'm not familiar with your MES, but I'd check the cabinet temp with a calibrated therm and also look into how your getting circulation of air in that puppy.
 
When loading the chips did you turn the thing to dump the chips? You have to rotate it to do that.

Thanks RonP. Yup, I did that. I'm thinking that maybe I didn't have the chip holder positioned properly - maybe the base of the pan was not touching the heating element or not close enough?

After my post yesterday I made those smoked baked beans (which, by the way, were delicious - best I have ever had) and this time I got plenty of smoke at 225.

So I am not sure what I had done wrong the first time.
