Things are looking good after an hour and a half in the smoker.

Ok actually just shy of the 2 hour mark and the breast is already at 156, thigh is at 149..... it is an 11 1/2 lb bird. Is that possible PDT_Armataz_01_05.gif

I have had the smoker cranked up to about 350 to 370 ish depending on which thermo you believe.

Those temps are possible considering the smoker temps you listed for that size bird.

Pulled it out at about 2 hrs and 15 minutes. I had lowered the temp in the smoker a bit and tented the breast. Final temps as I measured are 166 breast and about 172 in the thigh. I am not use to the built in thermo not poping but they are probably still set to the old higher temps I guess. Will reheat the bird abit when we get to the inlaws.

One bird down, next is the one that is going in the fryer but that is getting done when I get to their house. 18 lb bird I am estimating at about 65 - 70 minutes at 3.5 per lb.

These birds were brined for about 10 - 11 hours. I cant wait to taste them!!

Most definitly possible. A #11 1/2 bird will take between 3 - 3 3/4 hrs at
325*, and you had it at a higher temp!


Those "pop out thingies" are set to go at 180*...Too high for me! By that time, the breast gets dry.

Here is a pic of the second bird after it came out of the fryer.

Both birds were very good, but the fried one seemed to be the favorite.

The fried was the chosen one by all, the smoked was very good, but the fried was just a bit better.
