I used an old Brinkman a few years ago but have gotten by with my grill the last couple of years for what small stuff I have done. I know just about enough to get myself in trouble so will welcome any help you'all can give. I'm looking at building a smoker modeled after Peoria Custom Cookers backyard model, "all you need is time & money" and in my case a lot of advise from compassionate, in the know, onlookers aka you guys. Between that, building a 72 High Boy with my son and keeping up with 2 Grand Kids I think I'll be able to keep busy this summer.

You can smoke on just about anything as long as it gets you where you want to go! If you have any questions just post them we'll have someone that's done it and can answer your questions!

Welcome to SMF.
Those Peoria Custom Cookers are nice, but a bit pricey. You aught to be able to build one for 1/4 of that with options, if you do ALL the metal work yourself. I suspect these smokers are so high because the labor involved in welding. I doubt many are robotically welded, so someone has to spend a bunch of time doing it.
