smoked ribs

What are you guys referring to when you say 321? Does this mean 3 hours smoke , 2 hours, covered with apple, 1 hour uncovered?? If this is what it means, can you do the 2 hours in the oven?? I'm new to this and am wondering if anyone can help me out. I'm using an electric smoker.

That is a popular question. There are many short dissertations about this topic and I could repeat it but I suggest that you read a post that I created in July of 2005. It is in this Pork topic section on page 2, the title is "The 3-2-1 method, a controlled experiment".
