I'm up in Northern MN, using a dyna glo offset. Been smoking venison summer sausage for years, always turned ok bit have always known om missing something in my technique. While also wanting to learn how to better put up some pork shoulder and try my hand bacon I've learned a ton and think I'll be able to put some better sausage on the table. Just need the 13 yr old to bag a deer again.
Anyway, got my first bacon on right now as we speak. Already posted a question in the cold smoking bacon forum but won't repeat it here.
