I wanted to share some pictures of a cook from last weekend.

My main intention was to shadow one of NC's most successful whole hog cooks. He competes in the North Carolina Pork Council "NCPC". I am also a certified judge in the NCPC. Roy has several state championships under his belt and has several 1st place cooks this year. This years state championship will be this fall in Raleigh.

We put the pig on at about 8am Friday morning and it was ready about 5:30 for our 7pm cooks meeting.

I competed in butts and ribs. I finished 4th in pulled pork out of 25 and in ribs I finished 13th out of 29 teams. It was scorching hot Friday and Saturday!

This was not a sanctioned event and the judges were not certified. No garnish.
