I've done two whole chickens so far with marginal results. Since we're into summer I decided to give chicken legs a try. Seasoned them with McCormicks Cowboy Rub. Also did a pork loin since I was going to have the WSM fired up.


Fired up smoker with some hickory chunks with a small amount of water in the pan. I let it run hotter than usual, around 300 to try to get the chicken skin crispy. The legs were done just under two hours and the loin was done in about 2.5 hours.



Put both in the oven at low to keep warm until dinner time. Both got rave reviews from the fam. I feel redeemed in the area of chicken!

That looks tasty! If you haven't tried bacon wrapped asparagus give it a try sometime.

Yeah that damned poultry skin seems to do best when you are over 300F.  I shoot for 325F when doing chicken and turkey.

I've also found putting whole chicken on a vertical roasting rack produced way better results than laying on it's back,  Not sure why but I was skeptical until I did it and got better results hahaha.

I just put two 5.25 pound chickens in a brine so I can smoke them tomorrow and have pulled chicken meat for the rest of the week.  My verticle chicken roasting rack can do 2 chickens vertical at once  :)
