chuck roast burnt ends question

Hello all,

I have at this point never made a batch of burnt ends.  I've been looking at the recipes using chuck roast to do this.  I want to make some for a Father's day gathering, but there is no way I can do the entire smoke session that day.  My question is: Can I smoke the roasts the day or two before and then finish cooking on Sunday.  My thoughts were to smoke until IT of 190-195, rest for an hour, then cube the meat an throw in the fridge.  Then on Sunday throw the cubes in a pan with sauce and rub to finish the cook.  Anyone done this or think the process wouldn't work? Or would I be better off to put the roasts in the fridge whole, and cube up right before cooking again?
 
Either method will work. II have prepped them in advance when traveling. Cube into the foil pan that I am going to smoke them in. Add sauce, sugar and seasonings, cover with foil and into the fridge until they need to go back into smoker. I have also used leftover roasts that on a whim got turned into burnt ends. Either way you will be fine.

It will be easier to cube up cold.
