One of our favorites on the Traeger.  Thick pork chops stuffed with sautéed mushrooms onions and spinach. Once the stuffing cools mix it with some cream cheese and stuff.   I low temp smoke them for about 1 hour then crank up temp to get internal to 145.  Really great with some cous cous!!!
