First baby back ribs of the month

It was too nice of a day not to smoke yesterday. 74 degrees and not a cloud in the sky.
My offset smoker pretty much held at 280 - 282 the whole smoke.

I cut up some potatoes & onions and put them in a 1/2 pan.


I ended up smoking a couple of baby back ribs. The rub I used on the ribs was John Henry's summer peach rub.



No cook would be complete without my helper guarding the perimeter :biggrin:




The finished product below...


I ended up melting cheese on top of the potatoes.



Sure was a nice day for a smoke.

I like the rub...Been using it for awhile.
Usually when I smoke ribs, I do one rack with the peach rub. And have had quite a few people comment on it. It's a nice change.
I usually apply it pretty heavy. Do a coat and come back and do another coat in 10 mins.
It's cheapest to buy if you just get it from John Henry direct.

Thanks,I'll get the wife on it she's the tech/online person of the house. I was thinking of a peach glaze as well on the rotisserie.

Sauced thanks for the points! The dog is pretty laid back, except when I open the smoker door. It's like someone rang the dinner bell he's right at my feet getting in the way.
