Freezer Burnt

I am finding I have quite a bit of freezer burnt meat. It happens, wife goes grocery shopping, no real idea what we already have or finds a screaming good deal. Then it gets put in the freezer...face it, almost no one unloads the freezer to put the freshest in the back, so everything slowly migrates to the back/bottom and is forgotten.

 I'm thinking I might use the ground beef for summer sasuge and such, any pork/chicken could be ground for other sausages. The wife won't eat it so it seems prime for my experiments.

Good idea or not ?
 
Remove any burnt or off smelling portions and the rest is fine for sausage. But in general, no amount of spice will make bad meat taste great. It will still taste of Freezer Funk...JJ

I don't have a frost free freezer so I do rotate meats 

I do vac seal 80% or more of the meat that goes into it

so far nothing has had a funk to the smell, however the texture is often dry and tough. A vac sealer is already on the wishlist, but not my highest priority.

I know, but unless the have to pay/buy are taken care of, it's not time to invest in want to have/buy. for now I window shop.

I had to remove slight freezer burn today while cubing the goose meat I was given to make sausage. Not much, but I took my time to get it all...
 
Ah! And here I thought Al in this thread was SMF shorthand for a sausage supply company!!!
