Well, I finally have a few days off from coaching 2 teams because of the schedule?  What should I do?  I know what to do, break in the new smokehouse!  ShopRite had a great deal on baby backs yesterday (1.99/pound), so I picked up 7 and invited some family over!  Great beer, Great food.  My son and I rubbed up 7 slabs of babyback's and threw them in the new smokehouse at 225.  I have the AMNPS and the tube extended to 18" in there now.  I still think I will move the pellet smokers outside the smokehouse via mailbox or have my buddy fab something for me.  Here are some pics to start.  Ill post more later.

They were very good.  And the smokehouse is working great.  The biggest differential I have seen on temp up to this date is -3/+3 set at 225*.  The pellet smokers burn well in there too.  I thought I would need to move them outside, but I dont think that will be the case.  I will be purchasing another 12-18" AMNPTS.  Throwing a brisket and possible a chuck in this weekend.

Smokehouse is working Great---I figured you'd need a lot of smoke due to the size of the room.

I also figured if needed you could move the Amazings around for best smoke coverage.

All Looks Great !!!

Thanks HalfSMoked!  I love the name by the way.  I make a lot of home made wine and came up with a clever name for my "winery" thats very similar.  "Half Corked Vineyards".  Truth be told, most of the time while making wine or smoking meat, Im Half Corked!  haha..  I've been smoking for many years and it all started with a little GOSM that my dad bought me for Christmas.  Like anything in life, you want to graduate to a much fancier whatever and thats what I ended up with, the taj ma hall of smokehouses.  I like to call it "D&C Smokehouse where "Nobody beats our meats"! - PUN intended.
