Hello all. I am brand new to using an offset smoker. Had a concern that may be silly but I tend to be a worrier. I noticed particles of ash making its way from the firebox to the cooking area. It is a little windy today which may be part of the problem. Is this normal and will it hurt by pork butt? Any input would be greatly appreciated.

Didn't see an answer and the butt is probably all gone by now after two and a half days.  Sorry about that.

A little ash later in the smoke won't make any difference.  Although I don't have an offset, I get ash particles floating around in my WSM when I knock ash off the charcoal.  Not to worry.

How was the pork butt BTW?

Thank you for all the input. I just rolled with it and it turned out fine. Wrapped the pork butt in foil and finished it in the oven though I know some frown on that. I think I just need some practice. Cooking time was a lot longer with the offset even though I maintained a decent temperature. I will keep getting tips on the forum and will stay after it.
 
Hey Josh, absolutely nothing wrong with finishing a pork butt in the oven.  We've all done it. 

Butts can take quite a while.  I did at 9.2 lb'er this week.  19.5 hours (11.5 at 233F, 5 at 275F, 2 at 300F).  How long was your smoke?

Don't know what part of Oklahoma you're in but my little corner of NE Oklahoma was more than a little windy last Saturday. You're going to get a little ash moving around on days like that. As long as it doesn't get the meat completely coated you're fine.
