Rapid RH increase/decrease

This post is two part, the first being a pretty simple question and the second being a little more convoluted.

1. Does anyone have any personal experience with the Inkbird ihc-200 and how reliable their readings are or a way to test their accuracy?

2. I have a (approx.) 30"x18" wine fridge run through an Inkbird itc-308 and a ultrasonic humidifier run through a Inkbird ihc-200. The temp is set at 60* with a 3* differential in either direction, it typically hovers around 62.5* which means the fridge is constantly running. The humidity is much less stable. I have the humidity controller set to 75% with low differential of 5% and a high differential of 2%. The humidifier kicks in and very rapidly (~1min) brings the RH to 75%, kicks off and very rapidly (<1 min) drops back down to 70%.

Then repeats.

and repeats...
I'm wondering if, even though the numbers are within an acceptable range, this constant back and forth is an issue beyond having to refill my humidifier everyday and if anyone has tips to to stabilize the humidity?

I know small fridges (especially of the wine variety) can be tough to regulate, but its what I got so I'm working with it.

Low 70's is on the low side. I run 80% humidity.

What would happen if you bumped it up???.
