You should be very proud of that as a first attempt at a brisket.

I do not have a food saver, is there a good method I can freeze leftover brisket? There is only 3 of us and I don't want any of it to go to waste.

I use the water bath method with quart size freezer bags.
Put the serving size amount in the zip lock...Fill your kitchen sink about half full of cold water...
Zip the bag closed all but about 1/4 inch...
Submerge the bag in the sink keeping the unsealed corner out of the water...
The water will force most of the air out of the bag...
Squeeze the meat a little and squish out as much air as you can and zip the last corner shut.
Some folks will slide a drinking straw into the bag through the open corner and duck even more air out...
Doesn't work as well as a vacuum sealer, but does fairly well.
