My name is Dan. I'm from northeast Iowa. I enjoy hunting, fishing and photography. I've recently got a Cajun Injector electric smoker. I've "seasoned???" It by running it around 225° for a couple hours with smoke and a slab of pork fat. It maintained the temp and coated the inside with a nice camel color. I'm planning on getting rolling today with some jerky and then a pork shoulder after.
