What to do with LEFTOVER TURKEY GRAVY, we made Egg Foo Young

We had a bunch of gravy leftover from Thanksgiving Day.

So one dish we really like is Egg Foo Young.

It's so much better homemade than in a Chinese restaurant,

Here is the recipe we use, actually Judy made this recipe, and she is the one who cooks it.

I just do the grunt work.


Here's the pot of gravy from Thanksgiving.

We froze most of it, but saved 1 container out for the Egg Foo Young.


Here's most of the ingredients, I think the 5 eggs are missing.


Judy is doing all the chopping by hand, I probably would have just used the Cuisinart.


Everything is in the bowl except the eggs.


She beat the heck out of them.


And I got the flat top going.


Next mix in the eggs.


We cooked one to taste it & make sure it didn't need any more seasoning.


It needed a little more salt. Since we got the flat top she makes the patties bigger.

The recipe says it should make 38, but we ended up with 24 nice big ones.


There cooking real good.


Into a pan & into the oven to keep them nice & hot until time to eat.


Here's a couple of them with that smoked gravy.


These are really good & also a healthy choice for dinner.

They are nice & light & a welcome change after the Thanksgiving weekend pigout!

They will stay OK in the fridge for several days & they heat up real easy in the microwave.

Quick & easy for lunch or dinner.

What a refreshing alternative to the traditional stuff. I have been avoiding the forum like the plague last week, I don't like to see all those turkeys end up in the smoker, rather see them in the oven, blaspheme I know.

BTW, My gravy ends up in turkey soup, traditional I know but the family loves it.

Al how many eggs would be used if you don't use egg beaters? Bookmarked this:)
 Hey Mike!

We used 1 qt. of egg beaters + 5 whole eggs. 1 Qt of eggbeaters = 16 eggs.

So you would need 21 eggs total, but you wouldn't get the Southwestern seasoning that is in the eggbeaters.

You may need to add additional seasoning to the recipe.

What a GREAT idea!  I LOVE egg foo young.  My wife, not so much.  I have a bunch of drippings in the refrigerator from the last week or so, plus some smoked chicken.  I think she just might go for this idea.  Thanks Al!

I love those things, always get them when we go eat Chinese  Never tried making them at home, may have to give it a try
