Brine question

Morning!

I put a 15 pound bird in brine in a cooler last night around 8pm. I added ice around 11 and went to bed. I just woke up at 4am and temped the water. I've was still floating at the top and 2 corners were around 38 degrees and the other side was at 41 degrees. Do you think the turkey is ok? I reached into the water to move it around and it froze my hand. I just don't like seeing the 41. Thoughts?

You are fine...Don't let the numbers Scare you! Most harmful bacteria stop multiplying or do so very VERY slowly at 40°F or less BUT they do not Go Crazy multiplying at 41 or even as high as 50°F...The USDA/FDA had to put a upper and lower limit and 40 to 140 is easy to remember. The Temps where Growth is Really Rapid and dangerous is 70 to 115. Above and below that multiplication slows but there is still growth so staying <40 or >140 is safest...JJ
