Birthday Dinner, Hickory Smoked/Reverse Seared NY Strips

Today my youngest son turned eleven (11) years old, and thus was entitled to pick his choice for dinner.
I tried to get him to choose some nice fat Rainbow Trout at Publix, but he went for the steaks... Great choice!

So dinner tonight was:
Hickory Smoked/Reverse Seared NY Strips
Grilled Asparagus
Rolls -n- Butter
Birthday Apple Pie in lieu of cake

NY Strips spiced with SPG



Into the CCSV24 with plenty of hickory



Hitting internal 120' temp and ready for the cast iron



Getting a crust on, and going to 140' internal temp for Medium Rare



Grilled Asparagus



Pure Beef pRon

That's a mighty pretty plate...steaks look terrific!

Had fun cooking it, but an even better time eating it.
My son gorged till his belly bulged, then he got a second wind and demolished a huge hunk of birthday Apple pie.

First time actually smoking steaks, and the difference in flavor was very notable.
Before the CCSV24 it has always been just a foil packet of chips on the side while grilling.
No comparison.
 
Good method on the smoke / sear.  I use it myself but take the steaks out of the smoke at 95* IT.  The IT goes up quick in the sear phase in my experience.

Good call on the Kirkland Garlic, too.

Not if your skillet is hot enough :th_violent5: A 20' degree window is almost too much in my experience.

A 20' degree window is almost too much in my experience.
I use two grills when I cook steak.

Low heat and smoke


And a griddle directly on coals.  It's hot.

 
Steaks look awesome! That is a crap load of hickory wood on the smoker, how was the smoke flavor?

One even layer of chunks/chips, not too much, the pan is small.
It provided a good smoke for about an hour.
I like a strong Hickory, Mesquite or Oak smoke on beef steaks when reverse finishing.
With the other seasonings, it blends in well. Never had a complaint, yet.
In the past I've had to do it on my Charbroil grill which was good, but this is even better now.

The only better way IMO is direct grilling over an intensely hot bed of the fore mentioned woods, and that imparts a strong flavor too.

I know this threads old but thanks for it. Just got a rec tec mini and broke it in with some reverse sear steaks tonight. My first time using it and first time smoking anything. Didn't have time this weekend to do a full day smoke. The steaks i did at 180° for about 40 min when they hit 115°. Took them off brought temp up to the highest setting with sear grates it got to annoy 600°. Seared maybe 3min each side and they were awesome. So tender cooked perfect. Used hickory pellets definitely adds a different flavor to the meat. But in all were really good. Thanks for the thread.

Ill get some pics along next time. Was trying to pack the car and make a bunch of other stuff at the same time. All your recipes look so good though, your chuck burnt ends are high on the list too. Thanks again
