Hey Guys. I live in California and have been casually smoking food for the past 20 years. I have an old school New Braunfels offset smoker bought around 2000. Decent metal on the unit, but it still needs all the usual mods (haven't done any yet). I also just picked up a WSM.

Brisket is my favorite meat to smoke, which stands out here in CA where the BBQ meat of choice is Tri-tip.

Welcome to the forum!  I love me some tri-tip as well as brisket.  They are two different animals when it comes to procedure and flavor.
