Hello there. Scottie Bell signing in from beautiful Indian Trail North Carolina. I have been a lurker here for quite sometime now. I ordered Jeff's rubs and BBQ recipes November of Last year and that's all I've used for my Pork butts as long as I've been smoking meat. Yup, I’ve been doing it for about a year now. A Meat smoking Toddler if you will.. I’ve done 1 beef brisket, a tri-tip, a meatloaf, some atomic buffalo turds, a few Pork butts and a fattie so far. I enjoy it, it’s a perfect day for me. Getting up early, smoking meat all day, drinking beers with my dogs and relaxing. Just doesn’t get any better than that. The fact that my family truly appreciates the time and effort I put into doing my best to make them something Kick A**, Makes it just that much better. I don’t get to do it as often as I’d like for sure, but priorities come first.

I started on a Char-Griller 50/50, used that for about my first 8 months or so, then built myself a real basic UDS which is what I use most of the time now. Well the last 3 smokes. I still have some problems setting it and forgetting it, but I’ll get it sooner or later. LOL. I am here to learn. Sometime in the future I would like to be one of the guys that can give great advice, share killer recipes, and just generally knows what he’s doing. I’m a diamond in the rough to be molded into that guy, and I look forward to learning so much from you all.

I can't help you with how to use your Smoker, because all I use is an Electric Smoker.

However once you can control your temps good, my "Step by Step Smoking Index" might come in Handy for you.
