Whole hog freeze????

I ordered a whole hog last week, slaughtered on Monday of last week. Marinaded it Friday with some injections. Unfortunately a storm blew down how water powered rotissoire... And the next storm bent the spit bar I was gonna use..

My question is can I leave it in the bag (not freezer, just the trash bag I wrapped it in) and throw it in my deep freezer. I just don't have time or anything big enough to cook it today.

I hate to waste a 50lb pig...


Sigh . Thanks for any advice!

If it came down to wasting a 50 lb hunk of meat or throwing it in the freezer, in the freezer it would go. I hope it is already there since it has been 9 days since it was slaughtered.

It is not uncommon to age pork 6-14 days so you are fine there. Salt in an injection will increase the rate of rancidity in frozen meat but freezing no more than 4 weeks should be fine. Thaw under refrigeration only for max safety...JJ
