Brisket?

Went to my local costco to buy a whole packer cut brisket, but when I got there all they had were flats. I left empty handed. Will a flat by itself turn out as good as the whole thing? Do I have to treat the flat different or just smoke it the way I normally would?

It would likely be fine. As they say, cook by temperature - not by time. I think if you are going to go to all the trouble go all in.

My BJ's only has flats too... I get my full packers from Wal-Mart believe it or not.  It's select grade, but the two times I've cooked them so far have been good.  I have one going on the smoker tomorrow night.
