12 lb. turkey roast

Hello SMF! This is my 1st ever post, so hope it's ok if I jump right in. My hubby & I bought an electric Masterbuilt 30" smoker for Christmas. We have been using it weekly & love it! We have made a couple 3 lb. turkey roasts, pork loin, spare ribs, garlic brats, brisket, twice baked potatoes, & a pizza -most of them using Jeff's recipes! Haven't had 1 bad thing yet! :) But my question is - we received 3 "free" 12 lb boneless turkey roasts from a friend. They want us to smoke 1 for them, 1 for their friends & they gave us one to keep. These are a combo of turkey breast & thigh. The problem is they are in a cooking bag for baking in the oven but they have no netting. If we smoke these without netting, will they fall apart in the smoker? Do we need to find netting to wrap them before smoking? I was so excited when they brought these over - didn't think about them not having netting until I opened the boxes tonight!!

Ok, so I have texted my sister who's husband happens to own a butcher shop. I will be able to buy netting from him tomorrow. Hopefully this work out! These turkey rolls are huge! xx Will keep you posted.

Well - it was a process - from getting these big "birds" into netting to nearly 7 hours of smoking - but they turned out great! I was only able to try a bit of meat that came off while removing the netting but the flavor was amazing!



Just to give you an idea of the size, these roasts are each in a 9 x 13 pan

YUM! Tomorrow I will be smoking twice baked potatoes and a bacon explosion!

Looks'd probably have been fine tying them up with twine too.
