Chicken Sausage with Spinach & Feta

If you were putting spinach in a chicken sausage should it be cooked first?

I was thinking about doing three different chicken sausages this weekend. Feta with spinach, sun dried tomato with high temp mozz & fresh basil, & a chicken cordon blue with chunks of hame & high temp swiss.

Are you going to cook them fresh out of the stuffer or are you going to freeze them then cook them?

If cooked fresh out of the smoker I'd nor cook the spinach first. If freezing I'd cook the spinach then freeze.

My plan is to poach them up to temp & freeze for later use.
