I recently got my grubby paws on a couple of Wild Caught, Yellowtail Tuna Fillets... :drool

 

 

I've been wanting to make fish tacos for the past few weeks... :drool

 

...just a craving...

 

...well, maybe a little more than a craving, a hankering... :icon_rolleyes:

 

 

 

Grilled Wild Caught Yellowtail Fish Tacos

 

It's very simple to make fish tacos...

 

...lots of slight variations in the toppings...

 

...I used a mexican spice inspired rub...

 

...drizzle of evoo...

 

...onto my trusty and dusty kettle over direct heat produced by Pippin apple wood...

 

  

 

 

 

...hot 'n fast sear on the first side...

 

...squeeze of fresh lime juice just before removing from the grill...

 

 

 

 

...a few of the extras we added to our fish tacos...

 

...a spicy sour cream onto warmed flour tortillas...

 

 

 

 

...organic veggies...

 

...purple and savoy cabbage, cilantro, avocado and smoked onions...

 

 

 

 

...chunks of my grilled yellowtail tuna...

 

...ready to roll up and eat...

Since my trusty and dusty kettle was going to be hot...

 

 

 

 

A quick side dish...

 

 

 

Grilled Pineapple

 

 

Rough chop a fresh pineapple into bite sized pieces...

 

...a dash or two of cinnamon...

 

  

 

 

 

...into a grill pan...

 

...toss around to develop a nice caramelization...

Fish tacos and grilled pineapple plated together, for a fast 'n easy 20 minute meal...

Thanx!!!

 

 

It's something I ate a lot of when I was travelling and scuba diving in Mexico around Baja. Most restaurants near me batter and deep fry the fish for the tacos. No need to fry when using the yellowtail, I much prefer it grilled.

Very nice presentation.   I eat a lot of rock and ling cod taco's but have yet to try tuna.   Sounds like I need to send the wife to Baja for a 10 day tuna fishing trip.

With El Nino this year, they're a lot farther north than usual. I used to spearfish for yellowtail near the southern Channel Islands. Almost due west of San Diego.
