Hi Folks;  I'm Dave from Northern MN, and say Hi.  Enjoy making sausage, and have a 1hp Lem grinder,

A 5# vertical Gander Mtn stuffer, and a Bradley smoker. Have smoked  turkeys, beef, and sausage, but would like to learn about smoking in general

Hi, Dave! For what it's worth, I just got one of those Gander Mountain stuffers a few weeks ago and so far the Mrs. & I have made Hot Italian & Garlic Polish sausages, all with the help of the kind and patient folks on this site.
It's good to have you with us!
 
Thanks for the welcome folks;   Just made a batch of snack sticks with my new gander Mtn 5lb stuffer.

I worked great, but I wish the tube was a little smaller so I could get more of the collegen casing on it. Ended up with about 2ft lengths. In the smoker tomorrow and hope to be munching tomorrow night
