The weather here in the south is very unpredictable to say the least. This got me to wondering about he following questions.

#1 If I were to stuff some cured sausage into casings would it be SAFE  to freeze them for smoking at a later date?

#2 Same thing but with cured pork belly, can that be frozen for smoking at a later date?

There are times I want to make some bacon and or sausage but I don't due to weather forecast.

Let the meats Cure the recommended time then freeze as you wish. Cold stops the curing process but does not change or destroy what's happening. No issue at all...JJ
