Hi folks,

I picked up a 14 lb choice packer to smoke for a Halloween party.  I'm getting it on the smoker at 9:00pm on friday to be ready at 3:00pm on saturday. Any suggestions on how to serve brisket for a party?  I was thinking sliced in a pan with a bowl of bbq sauce on the side for those wanting to add sauce.  It's a pot luck style of party, and people will be sampling from lots of dishes. Any help is appreciated.

Lol be careful with BBQ bc then they will make you make it all the time, lol.

I usually do ribs bc it's a much shorter cook, and I know that the wsm is cooled off before I leave.-safety first lol

Enjoy your party

I like it so far, brisket has a special affinity for cracked black and I see you like it too! I actually asked a couple a butchers if they sold cracked black vice ground black pepper. They thought it a good idea. LOL

I can smell it from here!

Thanks folks!  Just got it off the smoker at 203 IT, wanted to take it to 205.  When probing it for tenderness, it felt like I was probing fat no matter where I stuck the probe.  I've never cooked one that felt so soft!  I'm a little worried.

I wrapped it in foil and towels and put it in a cooler.  Gonna rest it a while and then I'll share some pics.  I did manage to beat the severe weather, smoked for 15 hrs at 250.

Thanks for the link Foam!  I've got time to throw some veggies on the grill.

Hey guys, know its not about the food but I have several family members in Vernon Parish who are under water.  Trees are all over the place, 171 north is closed in several places.  Y'all stay safe, the weather is only gonna get worse it seems.

Thanks dennyman,  I've completed my outdoor activities and am now hunkering down for the storms.  The news channels have been warning us all week so hopefully everyone's prepared.  Sorry about your family members flooding, this has been a crazy weather cycle the past couple of weeks.

Very happy the party was cancelled!  This brisket was half fat!  I thought it was strange that it never hit a stall, and then when probing for tenderness it felt like probing fat no matter where I probed.  I felt resistance when inserting the Maverick probe, so it was monitoring meat temp and not fat.  I suppose that $2.79/lb for choice brisket was too good to be true.

Falling apart before slicing

Fat....

The brisket flavor is great!  Falling apart tender though.

LOL..... The meat is great! I'm so glad the party was cancelled! LOL

Congratulations on some good looking smoke.

Batten down the hatches looking like its just about to hit again. After no rain for a month, then last week and now this........... well I did see what I took to be a parade marching up river on the levee. Ya know thinking about it, there was two of each animal in that parade............Hmmmmmmmm.

Great looking brisket!
