Hi All:

So, long story short, I am learning to use my late husband's smoker. (Well, and grill, but I've gotten pretty okay at that.)

 

It's a Cajun Injector I bought him for Christmas in 2013. He used to do a lot of stuff for us - hams and chicken wings were my favorites.

 

So, I'm learning how to do it! I smoked some pre-cooked Buffalo Wings last month, and today I'm trying out some wings that I marinated in Frank's and Tony Cachere's. (I bought Jeff's rub, but haven't had time to get the ingredients yet.)

 

So, some new lessons:

1. Drip pan goes UNDER the heat... 

2. Do not sit downwind of the smoker.

Welcome from the upstate. This is a great site with lots of folks who are always eager to share their ideas and tips. All you have to do is ask and keep reading. What part of SC are you in? There is some preliminary work started to plan a bash for the Carolina's group sometime next spring. Keep on the lookout for that. We'll keep in touch.

Okay, so here is my first attempt at real wings. Next time, I will definitely separate the drumettes from the... non-drumettes. (What IS that word?)

I call the non-drummets , flats.  I don't know where this came from, but my GF calls the whole wing a drum-met, flat and a flipper.  She enjoys the flippers if I cokk them long enough!

Lol! The flippers are pretty tasty if cooked to death.  My gal wants chicken coked until there are no "jiggly" parts. Happy smoking!
