Snuck out on my lunch break and found some great lookin' flank steaks... 

 

...although we never knew each other, they were callin' my name... jaw-dropping.gif

 

...I just couldn't resist the siren's call and picked one up to toss onto my trusty and dusty kettle for a quick 'n easy dinner... 

 

 

 

Flank Steak Salad

 

Part Un

 

Unwrapped, untouched by fire and lookin' good... 241.png

 

 

 

 

...keepin' it simple to let the flank steak's flavor shine through...

 

...today's star's of the marinade... :cool:

 

...crushed, fresh garlic, fresh picked thyme from the garden, evoo, fresh ground black pepper and salt to taste... 

 

  

 

 

 

 

...after a receiving a massage every hour for the past three hours...

Homemade Croutons(the easy version)

 

 

Cube some day old sourdough bread, drizzle with garlic infused evoo ...

 

..add a little crushed, dried thyme and fresh ground black pepper..

 

...and into the toaster for some homemade croutons... :439:

 

 

 

 

...if you want to get a little more decadent, grate some parmigiano reggiano onto the croutons when they are hot out of the toaster...

 

...but again, I'm keepin' it simple, to let the flank steak be the star on tonight's menu... :icon_mrgreen:

Coals hot and ready for action on my modded kettle(22" charcoal grate to raise the charcoal closer to the cooking grate)...

 

  

 

 

 

...and onto a 500+ degree cooking grate... 

 

 

 

 

 

...peeking out from under the kettle's dome...

 

 

 

 

...first side seared...

 

 

 

 

...pulled after 8 minutes of fast and furious searing and allowed to rest...

Part Trois

 

 

Building the salad

 

It all starts at my local farmer's market. The choices seem endless and best of all, vary from week to week... :drool

 

 

 

First layer is some organic romaine lettuce, torn, not cut, for the crunch and crispness...

 

...a few tomato wedges around the outside for color...

 

 

 

 

...avocado and a wee bit of shredded emmenthaler cheese...

 

 

 

 

...added a few homemade croutons...

 

 

 

 

...a light drizzle of a homemade honey mustard dressing...

 

  

 

 

 

 

 

...and we're almost done... :rolleyes:

The flank steak

 

The star of tonight's menu has been rested and is ready to be sliced and served... 241.png

 

 

 

Last seen, the flank steak was resting comfortably on a platter...

 

 

 

 

...first couple of slices across the grain reveals the desired finish of a rare flank steak...

 

...and the chef's treat... :439:

 

  

 

 

 

...piled high onto the salad and ready to eat... :drool

 

 

 

 

...served with a soon to be released red table wine from a friend's winery...

 

 

 

 

...and for dessert, fresh watermelon wedges...

Flank steak is one of my favorites too. Great flavor and it's quick 'n easy to cook!!

 

Watermelon was a mini for a buck($1). Deal of the day at the farmer's market yesterday. Now I wish I had gotten more. 

 

Fun to run the watermelon through a blender with a little water, freeze for a couple of hours and add a wee bit of vodka for an adult slush. :icon_mrgreen:

...hmmmmm...

 

...what to do with leftover flank steak... 

 

 

 

Mushroom scramble and flank steak

 

...sliced crimini mushrooms sauteed to a golden brown in unsalted butter...

 

  

 

  

 

 

 

...eggs whipped with heavy cream, fresh ground black pepper and salt to taste...

 

  

 

 

 

...poured over the sauteed mushrooms and stirred constantly until set...

 

  

 

 

...sliced flank steak added into the hot pan for a quick heat through...

 

 

 

 

 

 

...my mushroom scramble and flank steak for breakfast...

 

...in less than 10 minutes... :icon_mrgreen:

Round three of sfprankster's (mis)adventures with a Flamin' Hot Flank Steak... :confused:

 

 

 

Flank Steak Fajitas

 

 

Begin with a selection of peppers, onions and garlic...

 

...can't be too hot and spicy or my gf will not eat them...

 

...a red bell, a green bell and a hatch pepper... 241.png

 

...too short on time to fire up the kettle to fire roast the peppers...

 

...so the gas stove top will have to work... :th_violent5:

 

    

 

 

 

...place the peppers into a bowl and cover with stretch wrap and let steam...

 

 

 

 

...remove the skin, seeds and pith, cut into strips and set aside...

 

 

 

 

......chop the onion and garlic and saute until cooked through and set aside...

 

  

 

 

 

...in a dry pan, toast some cumin and coriander until fragrant, grind or crush into a powder with mexican oregano...

 

...this is where you can make the fajitas HOT 'n SPICY with the addition of various chili powders... :icon_evil:

 

  

 

 

 

...slice the flank steak into thin srips, across the grain, and add into a hot pan with a small amount of evoo and the spice mixture...

 

...heat until warmed through...

 

 

 

 

...assemble onto warmed flour tortillas with a little sour cream and avocado(or whatever you like)...

 

 

 

 

...wrap and enjoy!!! :yahoo:
