Tried a flattened chicken, loved the smoked shrimp from last time so I had to do it again, full shell - head this time, delicious, but I don't see a difference in taste from the last time where they were pealed.
my new probe keeping an eye on things while I had a couple beers.
I heard a lot about this smoke not giving crispy skin, I started the smoke at a low temp, slowly moving up the temp as soon as I would see the temp progress stall, skin is very crisp, meat is moist and tender. Done with cherry.
