I'm new to the forum & smoking meats. While I've always enjoyed cooking & grilling, I'm anxious to begin stepping into the smoking world. My wife, 3 dogs, & I reside in Midland, TX. I've been an IT specialist with the Texas Dept of State Health Services for 19 years & my wife is a coding specialist in the medical field. Our 4 kids are grown & have blessed us with 13 grandkids, all that think Pawpaw is the greatest.....smart kids!
I'm 16 months from retirement with the State of Texas & hope to spend that time enjoying fishing, traveling, honey-do's around the house, golf with gang, & grilling & smoking.
I was diagnosed with advanced prostate cancer in 2012 & I'm in my 3rd year of treatment. I go to MD Anderson Cancer Center in Houston on a regular basis & I have the world's best medical teams in my corner. My Oncologist encourages my love of grilling & making that part of a healthy cancer fighting diet & lifestyle. So while I continue to kick cancer's butt, I want to take that up a notch & include smoked meats to it.
Since I'm a "worm" (that's oilfield lingo for a beginner) in the smoking world , I went with a simple smoker & picked up a Char-Broil 800 Vertical Propane Smoker. I look forward to learning from the experience of the other members & making the neighbors jealous when that smoke begins to blow around the neighborhood.
