Well I'm jumping in with a full head of steam on this one it's 3AM and my 14 lb creekstone Angus Prime brisket is coming up to room temp. The smoker is lit and coming up to temp. I'll keep you posted.
Target temp was 250*F.
The smoke stack extension is more or less to keep smoke outta everyone's eyes at a all day BBQ. And Post Oak I used Post Oak along with Royal Oak Charcoal.
