New here, but I've been smoking for a few years on a Char-Griller Trio with some mods. I smoke baby backs about 6 times a year for family and friends, bear can chicken a few times a year, gourmet burgers, chicken, etc. I recently smoked meat loaf that was incredible and also around Oct/Nov every year I smoke pumpkin seeds. No matter how many mods I've done to my smoker I still fight keeping the temp steady, so I'm considering either installing fire brick or getting a new smoker altogether. I'd like to do a butt, yet hesitant on ruining it and blowing my cash. Happy to lend advice and receive the same from others.
