Odd Meat Curing Question.

Has anyone used either TQ or Cure #1 on Organ meat such as Liver,Heart,Kidneys or Brain? Honestly i am serious, i was thinking about Curing then Smoking some Beef Liver, but i am not sure if Organ meat is safe to use cure on or not.

I can't speak for Cured Brains but the use of Sodium Nitrite with Liver, Heart and Kidney for making Sausage is very common. Here is some info...JJ
