Hey new to the sight my name is Wes Ive been smoking meat for about 4 years still learning a lot. I'm currently smoking with a gig Jim Bowie smoker. I have a few questions I just got my pellet smoker used 3 times the third time It kept temp really well but my ribs come out just ok. It seems like the pellet smoker should be set at a lower temp than I'm used to with charcoal?
