So I need to understand better the type of smoker that I am working with, what its limitations and strengths.


It burns a little pile of saw-dust in the box.

They are pretty common in professional kitchens here in France.

Looks like an electric version of a stovetop smoker, which works basically the same.  Check out "Stovetop smoker" on Amazon and read the reviews.

Ok. so I tracked down this page,


which tells me its a One level Table top Cold smoker and that little heater thing is on a timer that will light the sawdust on...'smolder'.


...So off to the cold smoker pages! huzahh
