Well that IT conference I attended in Austin last week really did me in this time. After tasting some of the best brisket I have ever tasted I consider my life changed for the better. Myself and my 2 young children spend a lot of time in the backyard when the weather let's us. Why not start smoking some meat while were at it? Hell, if I can get half as good as those guys down in Texas it will still be better than anything I can buy around these parts.
Any suggestions on a starter smoker less than $350?

Welcome, glad ya joined us ! What kind of smoker ya interested in ? Charcoal, stick burner, or electric... There's stick burning offsets, WSM charcoal smoker (you could also build a Mini WSM) or there's an MES that's electric ! There's also pellet grills but that may be outta your price range !

Leaning towards a stick burning offset. As much as I would like a pellet I'm just not ready to make that investment quite yet.

I gotcha, I would suggest starting another thread asking the folks who have an offset what their opinions are... I know Gary S another member on here has an offset, but he's the only one I can think of right now ! I'd give ya my 2 cents, but I don't own an offset... Bout the only smoker I don't own ! LOL

Welcome aboard. Lots of great info found here. Kind of new to smoking myself.
I bought an old used stick burner off set about 6 months ago and have made a lot of mods to it. It takes a little time to get used to an off set (certainly not a set it and forget it) type smoker but then thats part of what I like about using one.
I've done several brisket's that family & friends love.

Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to something you put on a plate to eat then someone here has probably done it then smoked it.

Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with their opinion on the subject.

Always remember the only dumb question is the one you don’t ask!!

One thing you would like about an offset: it can double as a grill. Depending on the model, you might have racks for the firebox so you can run it as a little grill by itself. You'll probably also be able to burn on an adjustable-height tray in the cooking chamber. Look in the thread in my sig to see how I've been playing with mine. BTW it came from the Sears hardware on Henderson, marked down to $125 from the usual $150.

Like BlueWhisper said an offset can also IMAG0067_1_1.jpg 126k .jpg file be used as a small grill ,and if it has
a warming plate , a pot of beans or in this case sum eggs& scrapple while smokin brisket in the AM.

I'm just across the river in the Mill Run area. I will have to check out the Sears hardware over there. They just closed the one in Hilliard.
