My name is Mike and I just bought myself the MES 30 (not the glass door model, but the one with the vent on top).
I love to cook and I make a lot of beer and have been wanting to get into smoking for a while now. I picked up the MES yesterday, plan on seasoning it today and getting something into a brine or rubbed to sit in the fridge over night and do the first smoke tomorrow.
Also I plan on getting the meat grinder attachment for the kitchenaid mixer and doing sausages.
I am in Reno NV (for now) but CA , Sacramento area is home. I just wanted to introduce myself and say thanks for all the info. I have already learned a ton in the last few hours of research.
