got a couple different turkeys going for the crowd today 

 

first is a Jerk seasoned 16 lb  turkey, with a jerk injection then covered with some hot jerk seasoning

 

 

 

Next is a nice sweet 14 lb turkey injected with some butter sauce with added mollases then covered with a savory turkey seasoning and plenty of brown sugar

 

 

 

 

Put them on the big block at 3 AM set on about 250 with some apple and pecan chunks, back to bed

 

Got up at six and gave both a coating of canola oil and an additional spice coating along with some fresh wood chunks

 

 

spicy jerk

Killer is ready to eat

Heres the final turkey and ham shots

 

Brown sugar looking good

 

 

Got my gizzards,neck and heart on the smoker

 

Spiral ham heated up with a coating of sweet glaze
