I can do this gluten free and the chili level would be fine. I've made osso bucco for my wife before and she loved it. Thanks again! Oh and since.you mentioned tongue aka lengua, try it in stir fry rice instead of pork. Very delicious!

I'm trying to catch up on nose to tail posts, and saw this great one.  Only a day late, not too bad for me!  Oxtails have amazing flavor, they are one of my favorite cuts.  I'm having a hard time getting them now, because with the increased interest in nose to tail eating, local restaurants are buying them all up from the ranchers in the area.  Pretty frustrating.

 

I enjoyed seeing your preparation of them.  Looks like a very flavorful way of preparing and serving them.  Beautiful pictures too!

Glad you liked it.  You see chefs making a ravioli filling out of them,hell of a lot of work. I think a 2 stage process helps with the fat rendering otherwise they can be very rich. They do have a great flavour.I bought up big ,stuffed them in the freezer & forgot about them.

Its a great meal ,just as well because I am home alone Sunday to thursday & thats whats for dinner:biggrin:.

Its been stupid hot here so I am eating lighter including more fish.Total fire ban so I can't grill over charcoal . I just need to get the right fish ,right day & some A grade banana leaf & I will do something FNQ style.Thats Far North Queensland .
