PS Seasoning Hot Andouille Mix - Anyone try it?????

I've made my own Andouille for a couple of years now and have always used the NOLA recipe.  I'm going to give the PS Seasoning Hot Andouille mix a try this year and was wondering if anyone out there has tried it.  I was buying some of their 7 pepper blend hot stick seasoning, some brat seasoning and some casings and I saw they now carried andouille and I thought I would give it a try.  Any feedback is appreciated.  Thanks.

I haven't tried it, but I'm interested to see what your thoughts are if you do. I personally like to mix my own stuff and adjust it per my tastes, but sometimes it's hard to argue with something that good already.

I'm with you on that.  I'm taking a leap of faith, but I like their other seasonings so much, it's hard not to give it a try.  I will definitely provide a review when I am done.  I would really like to know if it needs a little extra garlic, etc.  I have enough for 50 lbs.  I may make 25 up as is and then make up another 25 adding what I think will help.

I use their Maple Habanero Snack Stick seasoning and their Landjaeger seasonings and like both of those very much but I haven't tried their Andouille.

I was looking at the Maple Habanero, but have had really good luck with the 7 Pepper and it is hard to switch it up.

I have had done a lot of PS and never had a problem, I did do there Maple Cure in a Jap Summer Sausage and I did not care for it because I don't like a per say sweet meat, just reg cure for me. I have done their Bloody Mary snack stick and it was good, also there taco flavored brat seasoning that I added cure to and made snack sticks, probably my best so far. Their service and shipping is great, and look for their weekly adds.

I've used the ps seasonings for jalepeno summer sausage links and it gets great compliments from all who try it. Great flavor and not to hot so even my wife likes it. Problem is its so good i cant stop eating it. I've been thinking of trying the maple habanero but figure its gotta be hot. Let me know if you've had it and your thoughts.

Sorry about that Jck. I found them online years ago. I do see now you can get them retail as well if you need some in a hurry. I've always bought direct product has always come quick and fresh and always felt like they had good prices. Thanks for the link dave.

For those that didn't see my andouille thread, it turned out very good.  I wish I had some of my NOLA recipe sausage left to compare it to, but it is long gone.  Good feedback from friends and family so far.  I think I will stick to the PS seasoning hot andouille blend moving forward.  The only think I will do different is add a bit more chopped garlic than they recommend and add some additional black pepper.

I use the Maple Habanero blend for stix and 38mm casings for slicing (fits a Ritz cracker very well). It has a med. heat (not bad at all) with a hint of sweet to balance the peppers. I think it is a great blend.

Dang it that looks great, I just did a batch of Chipolte wire fire snack sticks, and the habanero Sticks and they (both from PS Seasonings) both turned out great, I stuffed them in 21MM Collegen. 

 

Glad yours turned out.
