Last day of summer smoke

My God... where did summer go? I feel like I was just planning the Memorial day party menu.

Oh well, here's to fall I suppose.

Today's victims - honey pecan smoked pork chops.

Not much to see yet, they just went in the brine bucket for the day.



Going to smoke some chicken thighs for bbq chicken nachos for football/Nascar today.

Thighs rubbed and going into the fridge for a few hours. Smoke will roll around 1100.

Just once I'd like to go to the store and get only what I need... I walked by the meat case and these big meaty CSR's were just calling my name... Saying, "buy us... you know you wanted to try the CSR-pork burnt ends recipe...."

So throw one more selection onto the menu today.

CSR's pulled off and cubed up for burnt ends.



Just stirred the mac n cheese. It looks great. Another 45 minutes until it's done.

God damn are these good! Good smoke and real tender.



I was feeling pretty lazy today so I didn't whip up homemade BBQ sauce. Grabbed a bottle of this instead. Pretty good flavor!

I'm pretty sure any sauce would be good on those ends!
