I'm finally getting around to showing off last weekends effort. Four bone in breast 1/2's and two pieces of pork belly. I use a brown sugar, salt, paprika. chili powder rub overnight.
We like Hickory, but not too to much. Used 5 chunks for these, just right. First time I tried the pork belly. I get it at the local Asian market cheep. It was FANTASTIC! Melt in your mouth tender. Have to do more!
