I am not new to smoking but I am returning after a long hiatus. I live close to Lake Michigan and use a Brinkman charcoal smoker and a Kingsford master chef charcoal grill. I am in the process of building an over-under-double-grill-double-barrel-smoking-machine sorry got carried away with the hyphens. Today I am smoking a pork sirloin and tomorrow I plan to smoke some fresh caught rainbow from the big pond (hopefully if everything goes right).
