I'm 24 I'm the executive chef of a chicken rottisirie shop in Bournemouth Dorset the south coast of England I've been chaffing for five years and have had the opportunity to work in some amazing kitchens now I am on a venture of my own and it is goin to involve bbq I am planning on building a vertical smoker grill from a old hot keep I have been given but I don't have a clue about what I'm doing I understand the basic principles but as far as making it I could use as much advice of possible thanks for taking the time to read this and hopefully give me the info I need below are pictures of the steam cabinet if anyone could give me any guidance or have built a smoker from something similar to this any info would be much appreciated thanks

The advice I can give you from the beginning, is it insulated? as only the top is insulated on mine at it struggles to get above 120'C.
