I just received my SpitJack injector kit and thought I would test it out on a whole packer. Trimmed it up, injected, and rubbed to rest overnight. I started the temp at 250 but after an hour and a half the flat temp was at an IT of 150 so I backed off and dropped it to 230. I plan on letting it ride the whole time with no foil.
Injection:
Beef Broth
1 beef flavor packet
pepper
garlic
onion
water
vinegar
Rub:
2 parts pepper to 1 part kosher/sea salt mix
garlic and onion totaling 1/3 of salt amount
1/2 teaspoon ancho chile powder
