For the pork shots, did you put the cheese on before you put in the smoker or add it after X amount of time? How long were the pork shots on the smoker?

Put the cheese on at the start, stayed in until bacon was doneness I wanted, about 2 hours

Yep that's about right.  Its all visual as you're just looking for doneness on the bacon.
